Why one thermometer is not enough A coolroom is not a single uniform temperature. Air near the evaporator is coldest; air near the door and furthest from the fan is warmest. Monitoring only the door display can hide a warm zone where food is actually above 5°C. Identify the warmest point — usually furthest from the evaporator and closest to the door — and monitor there. Consider zoning larger coolrooms so each shelving area is checked. Use continuous digital logging rather than a single spot check. Logged data reveals overnight drift and defrost spikes that a once-a-day glance misses. Door discipline and restocking Most coolroom temperature problems are behavioural, not mechanical. Every door opening lets warm, humid air in. Open the door only when necessary and close it quickly — no propping it open during a long restock. Stage product outside the room and load it in one efficient pass. Managing defrost cycles Most modern coolrooms run automatic defrost cycles to clear ice from the evaporator. During defrost, the recorded temperature rises briefly and then recovers. This is normal, but it can trigger false alarms or mask a real problem if you do not account for it. Schedule manual daily checks outside the defrost window so you read the true holding temperature. Confirm your sensor is not positioned where it reads the defrost spike as a genuine breach. If the room does not recover to setpoint within a reasonable time after defrost, treat it as a fault and investigate. What to do when a coolroom exceeds 5°C If your coolroom reads above 5°C, act quickly and assess the risk to food based on time, food type and the temperature reached. Confirm the reading with a calibrated probe in the food, not just the air display. Estimate the exposure time. Apply the two-hour/four-hour rule: under 2 hours in the danger zone, refrigerate promptly; 2 to 4 hours, use immediately; over 4 hours, discard. Discard high-risk food rather than gamble on a foodborne illness incident. Document the corrective action — what happened, what you discarded, and the fix.
