Cleaning Slicers, Mixers & Attachments Safely

How to clean meat slicers, planetary mixers and food processors safely: unplug-first disassembly, sanitising, Listeria prevention and cleaning frequency.

Clean a meat slicer by switching it off and unplugging it, setting the blade to zero, removing detachable parts to wash and sanitise separately, then hand-cleaning the body and blade without spraying water at the motor. Slicers, planetary mixers and food processors are high-risk machines because they contact ready-to-eat food and are riddled with crevices where residue hides. Inadequately cleaned deli slicers have been linked to serious Listeria outbreaks. This guide covers safe disassembly, the correct cleaning and sanitising sequence, and how often each machine needs attention. Why these machines are high risk Two things make slicers and mixers dangerous if cleaning slips. First, they touch ready-to-eat foods such as cooked meats, cheese and prepared batters, so any contamination goes straight to the customer with no cooking step to fix it. Second, their design is full of hidden surfaces: the area behind a slicer blade, the ring guard, the mixer splash zone and the threads on an attachment all trap food. Listeria monocytogenes is particularly dangerous here because it grows in cool, moist conditions and forms biofilms on equipment. FSANZ Standard 3.2.2 requires food contact surfaces to be cleaned and sanitised, and these machines are exactly why that rule exists. Safety first Always switch off and unplug the machine before cleaning — never rely on the on/off switch alone. Use cut-resistant gloves when handling slicer blades. Never submerge motor housings or spray water directly at the motor. Follow the Safety Data Sheet for your sanitiser and use it at the correct concentration. Meat slicer cleaning procedure Switch off and unplug the machine. Set the blade thickness to zero and engage the blade lock. Remove all detachable parts — the sharpener, deflector, product table and ring guard where removable. Wash detached parts in hot detergent water, rinse, sanitise for the full contact time, and air-dry. Wash the body and blade with cloths and an approved cleaner, working from the centre outward, using a cut-resistant glove. Never spray water at the motor. Sanitise all food contact surfaces and allow the correct contact time. Dry, then reassemble ready for next use, re-engaging guards. Pay special attention to the area behind the blade and the centre plate, which are the classic spots where Listeria hides in delis. Planetary mixer cleaning Detach the bowl and the attachment (hook, paddle or whisk) and wash them in the dishwasher or by the three-sink method, then sanitise and air-dry. Wipe the mixer head and column by hand with a cloth — never submerge the motorised body. Inspect the splash guard, the attachment socket and the underside of the head, where dough and batter collect unseen. Dried batter around the socket is a common failure point in audits. Food processor and attachment care Disassemble the processor fully — blade, bowl, lid and pusher — and wash each part separately. Handle blades carefully and store them safely. Rinse and sanitise, then air-dry rather than towel-dry to prevent corrosion and re-contamination. For any attachment with threads or seals, check that food has not lodged in the grooves. How often should you clean these machines? Slicers handling ready-to-eat food: clean and sanitise after every use, and at minimum every 4 hours during continuous use. Between different products: clean whenever you switch, for example from smallgoods to cheese. Mixers and processors: clean after each use; a batter-only mixer used repeatedly for the same product should still be cleaned at least every 4 hours. Weekly deep clean: motor housings, gaskets, guards and hard-to-reach crevices. Train staff on safe disassembly and record it in your training records , because most slicer injuries and cleaning failures come down to a step being skipped. Cleaning between products and allergens Slicers, mixers and processors are also allergen risks, not just microbial ones. A slicer used for a wheat-crumbed product and then for plain cheese can transfer gluten; a mixer used for a nut-containing batter can carry traces into the next mix. Where a machine is shared across products, clean and sanitise thoroughly between items, and schedule allergen-sensitive tasks to minimise changeovers, for example running all allergen-free batches first. Make sure staff understand that a visual wipe is not enough to remove an allergen, and that the same full disassembly and wash used for microbial safety is what protects allergic customers too. Record these changeover cleans so there is a clear trail if a customer ever raises an allergen concern. Blade safety and storage Slicer and processor blades cause serious injuries, and most happen during cleaning. Always unplug the machine first, engage the blade lock, and use a cut-resistant glove and a cloth rather than bare hands near the edge. Clean the blade from the centre outward, never toward yourself, and never leave a removed blade loose in a sink of soapy water where the next person cannot see it. Store detached blades and cutting attachments in a dedicated, clearly marked place, dry to prevent corrosion. A blade guard should always be reinstated before the machine is put back into service. Common mixer and processor cleaning failures Ignoring the attachment socket — dough and batter dry into the mixer head coupling and are easy to miss. Submerging motorised parts — water in a motor housing causes electrical faults and hidden contamination. Leaving the splash guard uncleaned , where batter builds up out of sight. Reassembling while wet , trapping moisture that supports microbial growth. Not sanitising between different foods , especially when moving from raw to ready-to-eat.
