While there is no prescribed format for how this information must be presented for unpackaged food, best practice is to provide it proactively — through your menu, signage, or digital platforms — rather than waiting for customers to ask. This reduces the risk of miscommunication and demonstrates your commitment to customer safety. Key Principles for Allergen Menu Design Accuracy Above All The most important quality of any allergen menu is accuracy. Every piece of allergen information must be correct, current, and verified. Inaccurate allergen information is worse than no information at all, because it gives customers false confidence in their food choices. To ensure accuracy: Base your allergen menu on a comprehensive allergen matrix that has been reviewed by the head chef or kitchen manager. Review every ingredient in every dish, including sub-ingredients in compound products (sauces, marinades, dressings). Contact suppliers to verify allergen information when product labels are unclear or incomplete. Update the allergen menu immediately whenever a recipe changes, a new dish is introduced, or a supplier changes. Include a date on the allergen menu so customers can see when it was last updated.
